A Touch of Spice: Chicken Tortilla Soup


Calvin just LOVES Chicken Tortilla Soup! I have never tried my hand at making it before but I am sure glad that I did tonight! It was soooooo good and actually really easy!

Makes about 5 full bowls of soup!

Ingredients:
-1 red onion (chopped)
-1 green pepper (chopped)
-4 cloves of garlic (chopped)
-1 T. olive oil

-1 (29 oz) can of crushed tomatoes
-1 Knorr concentrated Chicken stock 
-(29 oz) of water, fill the tomato can with water
-2 cans of black beans (rinsed and drained)
-1 (16 oz) bag of frozen corn
-1 t. crushed red pepper
-1/2 t. paprika
-1/2 t. smoked paprika (or more reg. paprika)
-1/2 t. salt
- 3 chicken tender strips (thawed & sliced)

-1 lime (sliced)for topping
-crushed tortilla chips for topping


1. Start by heating the olive oil in a large sauce pan then sauté the onions, garlic, and green pepper till the onions are translucent.  

2. Then add the crushed tomatoes, black beans, corn, spices, water and chicken stock. Stir, stir, stir. 
Bring the soup to a boil then reduce the heat to med-low and add the chopped chicken. Cook for 15 mins and then check a piece of chicken (the largest one you can find) to make sure it it cooked through. 



3. Have a slice of lime on the side of the bowl and tortilla chips to top! Enjoy!!
