Cookin' Queen


As we were on our way home from the beach Saturday Calvin spotted what looked to be a local favorite. A cute little BBQ joint in an old train car. It looked and smelled delicious!! Of course he looked at me with the eyes that said, "Lets get some BBQ!" my look back to him obviously reminded him of our tight budget. So I just promised to make him some good BBQ for dinner :) We decided instead to stop and get him some dark beer (which is def. on his favorite things list) and I devised a plan...

BBQ Pulled Chicken Sandwiches



  • boneless, skinless chicken breast (I used 3)
  • 1/4 cup dark beer of your choice
  • 1/2 ish cup BBQ sauce of your choice
Start by boiling some water. Once it is boiling place your chicken in the pot. If the chicken is frozen it will take a bit longer to boil. About 20 mins. Make sure you start checking the chicken when you feel it might be done, be careful not to overcook!




Once your chicken is cooked shred it with two forks or just use your hands. In a smaller pan boil the beer and BBQ sauce just till it starts to boil. Add the BBQ to the meat and stir. 

I placed mine on toasted wheat bread but buns would be great too. Enjoy!!
